Vineyards
Zillah Ranch is a cool growing site in the Rattlesnake Hills AVA. It is conventionally farmed with no cover crops. Average yield is 5 tons per acre. Zillah Ranch is on rocky, rugged ground overlooking the western end of the Yakima Valley that delivers lean structured cool-site reds.
McNary is a cool vineyard site that sits on top of basalt cliffs overlooking the Columbia River in the Horse Heaven Hills AVA. The property is conventionally farmed with Siberian Crested Wheatgrass as a cover crop. Soil profiles and viticultural practices consistently provide uniformity throughout the blocks and optimum maturity is achieved at lower brix whilst maintaining vibrant acidity.
Winemaking Notes
Machine harvested on August 16th, 25th and 27th pressed with minimal skin contact to stainless steel tank for cool controlled ferment at 55f. Tirage bottling. February 12th 2021. Disgorged rack by rack starting April 2023.
Tasting Notes
A traditional method sparkling wine the color of a ballerina's slippers. It opens with delicate aromas of fresh strawberry and dried rose petals backed by richer ones like baker's yeast. The palate is wonderfully refreshing, with bubbles that prickle and bounce over the whole tongue.
